Lemon Blueberrie Pancakes

This morning for breakfast we were thinking of just having cereal but I decided to try something different and being the rare occasion that I had fresh lemons and blueberries, we decided to throw them into pancakes and I think that was the best decision we could have made because they really did melt away in your mouth!
Start by adding 3/4 cup heavy cream into a mixing bowl.
Then add in 3/4 cup milk (I used 1%) *If you wanted to, you could just use 1 1/2 cups buttermilk instead of the combined mixture I used
Zest one lemon and set aside the zest.
Squeeze the lemon juice from that lemon into the milk mixture. Squeeze over your hand so no seeds fall in.
In a separate bowl, add in 1 1/2 cups and 1 tablespoon flour.
Then add in 1/4 teaspoon salt...
1 heaping tablespoon of baking powder...
Finally, 3 tablespoon of sugar...
Crack in one egg into your milk mixture.... Or tell your husband to do it because you hate touching raw eggs.. haha
With 1 1/2 teaspoons of vanilla extract.
Sprinkle in your lemon zest... it will smell so amazing!
No slowly add your wet and dry ingredients together.
Fold in your blueberries.
Melt butter in the pan...
Add in some pancake mixture...
Flip... And enjoy golden brown and fluffy with real maple syrup on top!
