Creamy Mashed Potato Bake

To go with tonight's dinner I decided instead of making fresh french fries I would make a potato bake. I measured this time so if someone else wanted to try it out they could. They are so creamy and delicious with just the right amount of golden crust on the top!


Start by quartering a 1 1/2 llb bag of mini Yukon gold potatoes while you wait for your pot of water to come to a boil...
Once the water is boiling add in your potatoes...
While you wait, chop up about 1 tablespoon (mine was heaping) of fresh chopped chives...
When the potatoes have become soft and tender, drain the water...
Add them back into the pot on low heat, and add in 1/4 cup of heavy cream...
2 tablespoons of unsalted butter...
2 tablespoons of cream cheese...
2 tablespoons of sour cream...
Sea salt...
Cracked black pepper...
Give it a good mash and add in your chopped chives...
And finally 1 heaping tablespoon of fresh grated parmesean cheese...
Mash and stir it all together and add to a sprayed baking dish...
Smooth it out with a spatula and put into a 350 degree oven for about 20 minutes or until golden brown on the top! ENJOY!
