Today I was in need of some beef. Not just a slab of meat though... that would be too easy! I was thinking more on the idea of flank steak. For some reason I just love this cut of meat! So I came up with the silly idea... or maybe the BRILLIANT idea of making some veggie roll ups. Total win! Hope you enjoy!
This morning was day two of my second paleo challange! What better way to start if off than with some delicious egg cups for breakfast! Also... These are so SIMPLE to make it only takes about 20 minutes to cook!
Tonight I decided to grill up some pork chops and get back to the paleo diet! Its time, haha. These chops will not disappoint you on flavor one bit! I will most definitely be making them again! Hope you like them!
Tonight I needed something different than chicken and beef. I thought about trying out a pork chop, but my heart was telling me I needed to have some salmon. This was one of the easiest and most flavorful salmon dishes I've ever made!
I bought some yams at the market and was trying to think of something delicious to make with them. I love love love fried potato hash so I thought I would try to recreate that with yams instead. I think it was a success!
So for the past couple of weeks I've gone paleo. It's actually been a great experience to step outside my box and try some new things! However, all I have been craving is some delicious tuna salad. There's a place in south padre island Texas called Yummie's that makes the BEST tuna salad. So today I tried to recreate that! And with the help of my friend Jess, I think I got the job done.
