Leek & Potato Cakes

I had recently made some pasta the other night with leek in it but had some left over. So when I was thinking of what I could make with it, I decided to combine them with potatoes and make them into cakes. Quick to prepare and a delicious side to any dish!

First shred 3 russet potatoes
Then chop up a leek
Along with 2 cloves of garlic
And shred about 1 cup of cheddar cheese
Throw it all into a bowl and mix
