Bacon & Egg Hash

Woke up this morning and wanted a hearty breakfast. Sometimes eggs are better when they're all mixed together with all the other joys of breakfast, haha. So today I decided to make some breakfast hash.

Start out by frying up four pieces of bacon.
While you wait for the bacon to finish chop up two potatoes an set aside
Add 5 eggs to a mixing bowl
Crack in some fresh black pepper
1/4 tsp sea salt. Give it a pretty good whisk. Set aside
Pull the bacon out of the pan and place on a plate with paper towel
Add the potatoes to the same pan as you fried the bacon is with the bacon grease
Sprinkle with a little sea salt...
And some freshly cracked black pepper. Let the potatoes cook uncovered for about 10 minutes
Chop up 1/2 of a yellow onion
When the potatoes have about two minutes left, throw in the onion and give y a stir.
Give the bacon a rough chop
Throw in with the potatoes and onions
Now pour in the eggs and do NOT stir
When the eggs have cooked around the edge gently fold over and cook the top
Finally sprinkle with cheese and let melt. Serve with toast! Enjoy!!
