Lemon Ricotta Cookies

I am so sick of the winter and so ready for the spring that I decided it's time to start baking and cooking things that remind me of spring time. Maybe this will make spring come, haha. If you love lemon as much as I do... these cookies will absolutely melt in your mouth... they might actually just make you melt because you can't believe just how amazing they are!


Start by adding 1 1/4 cup flour to a mixing bowl...
And 1/2 teaspoon of baking powder...
And 1/2 teaspoon of salt.... whisk it all together and set aside...
Add half a stick of softened unsalted butter to an electric mixer...
On high speed mix together the butter with 1 cup of white sugar... (for about three minutes)
Then mix in 1 egg...
3/4 cup ricotta cheese... (I used whole milk ricotta)
1 1/2 tablespoons fresh lemon juice... (which is about 1/2 a lemon)
And finally the zest of 1/2 a lemon... mix it all together until well mixed
Slowly stir in your dry ingredients...
Then drop the cookies on a cookie sheet... (each of mine were about 1 tablespoon or so and made 24 cookies. Also, you might think that for cookie dough it's too wet but it's supposed to be the texture of a semi dry cake batter) Place them in a 375 degree oven for about 15 minutes or until bottom is golden brown
Let the cookies cool for about 15 minutes on a wire rack...
While the cookies cool, add 3/4 cup powdered sugar to a glass bowl...
With 1 1/2 tablespoons of fresh lemon juice...
And finally the zest of 1/2 a lemon...
Whisk it all together until it's the consistency of a gooey frosting or glaze... and let me tell you, some got on my finger, BY MISTAKE ;-) It's delicious!!!
Take a teaspoon and add glaze over the top of each of your cookies I did mine over a cookie sheet so the drips would catch in the pan. Let sit for an hour to let the glaze harden and enjoy! Try not to eat them all in one sitting, haha!
