Oatmeal Brulee with Raspberry Sauce

For breakfast this morning, I wanted oatmeal but I decided to kick it up a little and turn it into oatmeal brulee. I wasn't sure if I would like the texture or not but after I started eating it, it was so creamy and delicious I ate it all right up!


Start by boiling 4 cups of water in a medium sauce pan on high heat
Add in 1/2 teaspoon of salt...
Once the water has come to a boil, add in 3 cups of old-fashioned oats. Stir together until oatmeal has come to the texture you like and the oats have cooked
On a lined baking sheet, place your ramekins and fill with oatmeal leaving some space to add the "creme" on top :-) Set the sheet aside.
In a separate medium saucepan, scald 1 cup whipping cream over high heat (Don't let come to a boil!)
Take off heat and stir in 1/2 teaspoon of vanilla. Set aside.
In a glass bowl, add 1/4 cup granulated sugar.
Crack in three egg yolks and whisk together.
Now quickly whisk in about 1/2 cup of your vanilla cream mixture.
Now combine your bowl into your saucepan and stir together until smooth
Now ladle the mixture evenly over the tops of your oatmeal cups. Place in a 300 degree over for about 40 minutes.
While the oatmeal is the oven you can quickly whip up some easy raspberry sauce. I forgot to take pictures of the steps but just add in 1/2 cup of raspberry jam, 1 teaspoon sugar, and a tablespoon of lemon juice. Mix together until it becomes a syrup. When your oatmeal is ready sprinkle on brown sugar and either use a torch if you have it or place in the broiler for about a minute. Serve with raspberry sauce on top! YUM!
