BBQ Chicken Pizza

We were waiting for the Schwanz man to bring us our pizza but because of the snow storm, he couldn't make it out. So instead I decided to just go ahead and make some pizza myself. Ray liked that idea too, haha.


Start by adding 3/4 warm water into a small bowl.
Then add in 1 teaspoon of dry active yeast and whisk together.
Now add in 2 cups of flour into a mixing bowl with the paddle attachment.
3/4 teaspoon of kosher salt
3 tablespoons of olive oil
And finally your yeast water mixture.
Mix together until it forms a dough, remove from bowl and add into and oiled bowl. Let sit covered for 1 hour.
Once your dough is ready to be used, roll it out on a baking sheet (I prepared my pan with olive oil and then dusted with cornmeal, I just like the way it comes out on the pizza crust)
Cut up one large chicken breast into cubes and add into pan with garlic salt, pepper, and olive oil. Cook through and remove from heat.
Chop up about 1/2 of a small yellow onion...
Chop up 3 cloves of garlic...
Spread as much bbq sauce as you like onto the dough leaving a crust around the edge.
Now you can sprinkle the chicken over the sauce with about a tablespoon of parsley.
Sprinkle on your chopped onion...
And the chopped garlic...
Sprinkle some parmesean cheese over the top, just to add for flavor...
Last, sprinkle on some freshly grated mozzarella cheese. Add as much or as little as you like. Put in a 500 degree oven for 15-20 minutes until the crust and cheese are golden brown. Enjoy!
