Italian Pork Burgers with Apple Chutney

I love to try new burgers and it's always fun to stuff burgers with cheese for extra flavor. Tonight I didn't stuff the burger I just mixed it right into the meat. Then I topped it off with some chutney to really complete the flavor. Best idea yet. Enjoy!

Start out by chopping 1 medium onion. Throw in a medium size pot over medium high heat.
Skin, core, and chop two Granny Smith apples. Add to the pot
Pour in 1 cup of apple juice
1/4 cup of apple cider vinegar
And 3 tablespoons of maple syrup
And finally about 2 tablespoons of fresh thyme. Give it a stir and wait for it to boil. Then turn to a simmer and cook for about 45 minutes or until almost all of the liquid is gone.
Now you can start making the burgers! I just had to take a picture of this beautiful smoked mozzarella... Yum.
Shred about 1 cup of the smoked mozzarella. (Best to do it when it's really cold so that it doesn't melt while you're shredding) Thrown in a large mixing bowl.
Next cut up 3oz of thinnly sliced pancetta and throw in the bowl
Skin, core, and dice up 1 Granny Smith apple and add to the bowl
Mince 2 cloves garlic and add to bowl
Chop up 1 tablespoon of fresh parsley. Add to bowl
Add in about 1 tablespoon of fresh thyme
1/2 teaspoon sea salt
1/2 teaspoon black pepper
Mix
Add in 1 pound of ground pork and mix well
Form into patties and drizzle on olive oil. Place in fridge for about 10 minutes
Then place on a low heat grill for about 10 minutes per side or until meat is at an internal temperature of 160. Grill some buns. Top the burgers with some chutney. Enjoy!!
