Beignets

Sometimes your morning just needs a bit of sweetness. So last night I prepared the dough to sit in the fridge over night and this morning I whipped up some delicious light and airy French doughnuts!

The night before you want to eat these little bits of heaven you need to make the dough. Begin by adding 1 tablespoon of dry active yeast to your mixing bowl
Then add 1/4 cup warm water. Stir together until yeast dissolved into water.
Then add 1/2 cup of canola oil
1/4 cup sugar
1 egg
2 cups flour
Now you can either use 1 cup of evaporate milk from the can... Or... You can make 1 cup of evaporated milk by adding 2 1/4 cups milk to a sauce pan. Simmer until only 1 cup remains
Once you have 1 cup and have let it cool add into the mixer on low. Slowly add in about 2 more cups of flour or until the dough has come together in a sticky ball
Remove the dough to a bowl and cover immediately. Put in fridge over night
Look what 24 hours can do!
Add some canola oil to the bottom of a heavy bottom pot
Rip off some dough and roll it out nice and thin
Cut into 2 inch square and begin to fry on both sides until goldeb brown
Remove to paper towel
Use a sifter to sprinkle with powdered sugar. Enjoy nice and warm with some coffee!!
