Italian Sausage Sandwiches

I guess I have been on a bit of an Italian fix this week. So to keep with the theme I decided to make some Italian sandwiches which make your mouth water and your soul melt.

Begin by drizzling about 1/8 cup of olive oil into a heavy bottom pot on medium heat.
While you wait for the oil to heat, slice up 1 yellow onion. Set aside.
Along with 1 red pepper.
Add 3 pieces of Italian sausage into the pot. Cook until browned on both sides.
Remove the sausage from the pot and add the onions and peppers in.
Crack in about 1/4 teaspoon of freshly cracked black pepper
And about 1/4 teaspoon sea salt. Stir and cook for about 5 minutes.
Then add in about 1/4 cup of fresh basil leaves
With 1/4 teaspoon dried oregano
2 cloves of pressed garlic
1 tablespoon of tomato paste
And 1 cup of Marsala wine. This will deglaze the pot for you, so use your wooden spoon to scrape the bottom of the pot. Cook for 2 minutes and bring to a simmer.
Almost done! Sprinkle in 1/4 teaspoon red pepper flakes.
And 1 8oz can of diced unsalted tomatoes. Stir together.
Chop each link into 6 pieces.
Stir it all together and cover for about 20 minutes. Or until the sauce thickens. Then scoop into some Italian rolls. Enjoy!!
