Green Chili Breakfast Burritos

I don't know why but I've been thinking about breakfast burritos all day. So I decided to go ahead and make them. They are easy, pretty fast, and OH so delicious!!!
Start by peeling and cubing one russet potatoe.
Throw the potatoes into a medium sized skillet over medium heat and drizzle on some extra virgin olive oil...
While the potatoes begin to cook, chop about half of a small yellow onion
Throw the onion in with the potatoes along with about 1/2 tablespoon of parsley...
A little sea salt...
And finally some black pepper...
Cover the skillet and let the potatoes cook through. (Make sure to stir around every once in a while so they don't burn or stick) In another pan on medium high heat start cooking about half a tube of breakfast sausage. (I use Jimmy Dean original but you can use spicy or whatever you would like)
Once the sausage is done cooking, add it in with the potatoes which should be about done by now...
Now you can crack in some eggs... (I used about five)
Quickly stir in the eggs and mix everything together the eggs will cook pretty quickly so make sure you stir it quick! Now you can add in the heat, haha. I used about 1/4 cup of green chili...
Sprinkle on some cheese, mix together and you're done! Wasn't that easy! Yum! Enjoy!!
