Homemade Chili & Cornbread

 When the temperature starts dropping I know that something that always seems to taste good after working outside with the horses is chili! You just can't have chili without cornbread so I decided to make some cornbread and chili! Yum!
Start by browning two pounds of ground beef in a large skillet or pot.
Chop up three cloves of garlic and add in with the meat while it is browning.
While the meat is cooking, chop about half of a large yellow onion.
When the meat is brown add in the onion and cook for 2-3 minutes.
Drain off the excess grease and begin adding 8 ounces of tomato sauce.
Two tablespoons of chili powder...
Two teaspoons of cumin...
One teaspoon of ground oregano...
One teaspoon of salt...
1/4 teaspoon of cayenne pepper...
Stir together and let sit for about an hour on low heat. While you are waiting, in a small bowl mix together 1/4 cup of corn meal with 1/2 cup of water.
When the chili is ready dump in the cornmeal mixture...
One can of kidney beans...
One can of pinto beans...
Stir together and let sit while ya make some cornbread! (If it's too thick or too thin for your liking add 1/4 cup of water or a little more cornmeal mixture) Start by putting 3/4 cup of cornmeal in a bowl.
Add in 1 1/4 cup all purpose flour...
1/4 cup of sugar...
2 teaspoons of baking powder...
1 cup of 1% milk...
1/4 cup of vegetable oil...
1 egg beaten...
And finally, honey!!! I don't really know how much I put in maybe about 1/4 of a cup. This really sweetens it up!!!
Put in a greased square baking dish or pan. Cook in a 400 degree oven for 20-25 minutes or until golden brown and fluffy! Enjoy with your chili!!!
