Pork Chops & Grits with Apple Glaze

One of my favorite things to eat for breakfast is grits, but tonight I wanted to try and make them be a dinner item and add on a pork chop. I always eat my pork chop with applesauce but I decided to do a twist on apple sauce and make an apple glaze. Hope ya like it!

Start by chopping up three pieces of thick bacon into small cubes...
Then chop up about a 1/3 of a yellow onion into small pieces...
Throw the onion and bacon into the bottom of a large pot on medium heat. Make sure to constantly be stirring so nothing burns on the bottom of the pan.
When the onions have cooked down and the bacon is just about to turn brown, add in 2/3 cup stone ground grits. Mix well.
Quickly add in about 3/4 can of chicken broth. Again, mix well. Let this cook for about 3-4 minutes mixing constantly.
When the mixture has thickened, add in about 2/3 cup heavy cream... (I never said this was going to be healthy, just delicious)
Sprinkle in about a dash or so of cayenne pepper and mix everything together. Cover and turn heat to low. Mixing every once in a while.
While the grits simmer, shred about 1/3 of a cup of Monterrey jack cheese.
Mix in the cheese and sprinkle in some fresh cracked black pepper. Mix together and leave on low heat covered.
Now we can start on the pork chops. First, begin by coring and cubing one gala apple. (Leave the skin on)
Add a splash of olive oil and a tablespoon of butter to a skillet on medium heat.
Place two pork chops in the skillet and season both sides with salt and pepper. (Let cook for about two minutes on each side, it will cook the rest of the way through a little later)
Remove the pork chops and place on a plate. Add in your cubed apples...
Splash in about 1/2 tablespoon of apple cider vinegar...
Add in a splash of white wine... about 1/2 a tablespoon... (Let cook down until about half the liquid is gone)
Add in about a teaspoon of maple flavoring...
And a 1/3 of a cup of maple syrup...
Place the pork chops back into the apple mixture and cover on medium heat for about 20 minutes... When finished cooking place pork chop on grits and spoon on some apples and glaze.
