Fluffy Chocolate Chip Pancakes

By Danielle's choice we decided to make some chocolate chip pancakes... her favorite! Found a recipe that said over and over how fluffy they were so thought we would give them a try. They came out awesome! So fluffy with the gooey chocolate wrapped up inside!
Gather all your ingredients and start by mixing all your dry ingredients in a mixing bowl with your whisk...
Then in a smaller bowl, melt your vegetable shortening...

Once the shortening is melted, mix together all your wet ingredients in a separate bowl. Now you can combine your wet and dry ingredients by whisking them together until well blended...
Add in your chocolate chip... I find if you use a spatula instead of a whisk to mix in the chocolate chips they don't get stick inside the whisk.
Scoop the mixture into a pre heated pan at medium heat until both sides are golden brown...

Add your favorite syrup and or butter and enjoy!

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt (use 1/4 teaspoon if you like a less salty taste)
1 egg
3/4 cup milk
1/4 cup shortening, melted

  1. In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
  2. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown
