Eggs Benedict

I had family over for breakfast and wanted to make something new and delicious. I decided to try and make eggs benedict. I think they were a success!
I started by making the hollandaise sauce first! Begin by putting the egg yolks into the food processor...
Next, squeeze in the fresh lemon juice...

Pulse together the eggs and lemon juice...

The next step can be tricky but just go slow and it will turn out great! Melt your butter and let sit for a few minutes. You don't want to add it when it is too hot or you will cook the egg. I poured mine through the spout on the food processor so it adds in slowly...
While you are pouring in the butter, make sure to be continuously pulsing the food processor. You will end up with a creamy sauce. Sprinkle in the the cayenne pepper...

Now you want to place your eggs for eating in your baking cups...
Get a pot of water boiling and add in the cups to poach the eggs...

While the eggs cook, begin toasting your English muffins and turn a pan onto medium heat and brown the Canadian bacon...
Pull the eggs out of the water as they begin to finish...

Place the toasted English muffins on a plate, butter, and put the Canadian bacon on top...

Then add your egg...
Then put the creamy hollandaise sauce on top and sprinkle with paprika! ENJOY!
