Mini Strawberry Pies

Easter is this weekend and this year my mom is having the dinner at her house so I'm just making desert. Strawberries remind me of spring so I decided on individual strawberry pies!

Start by dicing 8-10 strawberries. Set aside.
Then over a strainer juice half a lemon
And zest half an orange
Drizzle in 2 tablespoons of honey
And finally 1/2 tablespoon arrowroot
For those of you who haven't heard of arrowroot before he's a picture of what it looks like :-)
Give it a stir and then fold in the strawberries. Set aside
Crack an egg in a small mixing bowl
Whisk and set aside
The roll out your pie dough and cut 12 3 inch rounds
Also cut 12 strips of parchment paper
With the paper in the mini muffin tin, gently press in the pie round
Now roll out more dough and cut 12 2 inch rounds
Using a teaspoon scoop in the strawberry mixture into each pie
Brush the edges with the egg wash
Press down the 2 inch round
Using a fork, press down the edges
Brush the tops with the egg wash
Using a sharp pearing knife prick the top of each pie.
Place in a 375 degree oven for 15 minutes and then let cool for 20 before pulling out of the pan. Using the parchment paper to pull them out makes it super easy to pop right out! Sprinkle with raw sugar and enjoy!!
