Sausage & Spinach Stuffed Shells

I was in the mood for some spicy sausage and wanted some kind of Italian inspired dish... So I decided on this new gem, and boy am I glad I decided to blog it so I can make it again and again!

Start by preheating your oven to 350 andboiling  a pot of water. Then you can take the skins off about 4 pieces of Italian sausage. I used spicy but it would be great with mile too!
Throw them into a medium heat pan and start breaking up the meat and browning it.
While the meat browns, chop up 3 cloves of garlic.
Throw the garlic in with the meat along with one can of diced tomatoes with the juice.
Once your water has come to a boil, add in your jumbo shells
Add in about 1/2 cup of frozen drained spinach...
Along with 1/2 cup ricotta cheese...
Cracked black pepper...
Once the noodles are ready place them in an ice bath.
Carefully drain the water off each shell and place in a baking dish.
Fill each of the shells with your meat mixture...
Sprinkle with mozzarella cheese and place in the oven until all the cheese has melted down and heated the shells. Serve with red sauce and freshly grated Parmesan cheese. Enjoy!!
