Gluten Free Oatmeal Strawberry Applesauce Muffins

Sometimes getting ready in the morning can feel rushed. Knowing how important breakfast is and not wanting to skip it I wanted to make something I could have quick on the go. One of my favorite things for breakfast is fresh fruit and oatmeal. So what could be better than combining that into a convenient easy to grab muffin! Hope you enjoy it!

Start by adding 1 1/4 cup gluten free baking flour into a large mixing bowl.
Then add in 1 1/4 cup gluten free oats
One teaspoon baking powder...
1/2 teaspoon baking soda...
1/4 teaspoon sea salt...
And finally 1/2 teaspoon cinnamon. Mix together and set aside.
In a separate mixing bowl, add 1 cup of applesauce...
1/2 cup Greek yogurt...
1/2 cup packed brown sugar...
2 tablespoons canola oil..,
And 1 egg...
Whisk together
Slowly mix in the dry ingredients...
Just until mixed...
Chop up 3/4 cup fresh strawberries... (You could use fresh or frozen and really use any kind of fruit you like or have)
Gently fold the strawberries into your batter. 
Fill up your greased muffin tins and place in the oven for 16-18 minutes or until you stick a tooth pick in and it comes out clean. Enjoy warm or freeze the left overs for later to be thawed in the microwave.
