I was in need of a quick delicious appetizer. Looking in the fridge I had potatoes and that was about it... (Guess I need to go to the store!) Quick thinking led me to these delicious creations! Hope you like them too!
Wash off three russet potatoes, slice of the ends and slice into small pieces. Preheat your oven to 400 degrees.
Arrange on a baking sheet...
Melt about half a stick of unsalted butter in a pan on medium heat
Once the butter is melted brush on both sides of your potatoes.
Crack on some black pepper...
Sprinkle on some sea salt and throw in the oven for about 30 minutes.
Remove from the oven and sprinkle on some cheese and bacon. Put back in the oven for a minute to let it all melt. Garnish with green onions!
