Breakfast Empanadas

Its been a while since my last blog but I've been so busy and with the heat being in the kitchen isn't always the best idea, haha. Cooking in the kitchen seems to be less hot in the early morning or late at night so today I decided to make breakfast! I was thinking about breakfast burritos but decided to go off that and make breakfast empanadas.
I started by taking the bacon and frying it in the pan first. That way when I start making the eggs it will be ready to throw in! After letting them cool on paper towel I chopped it all up into bite size pieces.

Now you can start with the eggs. Scramble the eggs for the inside of the empanada and mix in salt and pepper. Make sure you leave one egg aside for the mixture to brush on top of the crust before putting it in the oven.
Before you throw the eggs in the preheated skillet, roll out your pie crust and cut into halves. You don't want to overcook your eggs to completely dry because you are about to throw them in the oven and cook them some more! Mix in bacon pieces and remove from heat.

Fill each half of your dough with egg and bacon mixture, add shredded cheese on top, and spoon on your favorite salsa. 
Now fold over the top half of dogh and push sides together with fingers. Then use a fork to press the edges firmly together. Brush whisked egg and water mixture on top of dough and move to baking pan. Sprinkle cheese over the top and put in the oven for 15 minutes at 400 degrees F.

Chop up some fresh green onions to sprinkle on top of your baked empanada with a side of salsa and enjoy!
