Before you start the marinara sauce... place your dough under a tea cloth and let rise for a good 2 hours. NOW... add 1 whole chopped yellow onion to a pan with some olive oil on medium heat...
Mix in three chopped garlic cloves with the onion and saute for about 3 or 4 minutes...
Splash in 1/2 cup of white wine... let reduce to half the liquid...
Once the liquid has reduced, add in one large can of crushed tomatoes...
Fresh cracked black pepper to taste...
Cracked sea salt to taste...
About 1 tablespoon of white sugar...
Break off a bunch of fresh parsley & basil and chop it up....
Throw it in with your sauce and mix it up. Let sit on low until ready to serve or store for later!
Now you can begin the filling for your calzones! Add some olive oil and about 1/2 tablespoon of unsalted butter to a medium heat pan...
Add in about 1/2 a chopped yellow onion...
When the onions are tender, add in about 1/2 llb of breakfast sausage...
Let the meat cook, and add in 1/2 teaspoon of Italian seasoning...
1/2 teaspoon of crushed red pepper... Once the meat is done remove it from the pan and set on a plate to cool. Now you can make the really creamy cheese part... my favorite!
In a large bowl, add 1 cup of whole milk ricotta cheese...
3/4 cup shredded mozzarella cheese...
1/4 cup of shredded parmesean cheese...
Fresh cracked black pepper to taste...
Cracked sea salt to taste...
1 egg... Mix it all together until well mixed...
Chop up some MORE fresh parsley...
Throw it in with the cheese and give it a stir...
The meat should be cooled now so add that in with the cheese to until well blended...
In a small bowl whisk up 1 egg...
After all the steps are complete... you can finally roll out the dough onto a floured surface into 4 equal circles...
Fill half of each circle with 1/4 of the filling...
Fold over the dough...
Place on a sprayed baking sheet and press down the edges with a fork...
Brush the tops of the calzones with the egg wash...
Place in a 400 degree oven for about 15 minutes or until puffy and golden brown. Enjoy with your marinara sauce!
