Flank Steak Roll Ups with Reduced Balsamic Glaze

Today I was in need of some beef. Not just a slab of meat though... that would be too easy! I was thinking more on the idea of flank steak. For some reason I just love this cut of meat! So I came up with the silly idea... or maybe the BRILLIANT idea of making some veggie roll ups. Total win! Hope you enjoy!
 Take your steak and cut it into equal sized triangular cuts...
 Drizzle with extra virgin olive oil and rub into both sides of the meat.
 Crack on some freshly cracked black pepper on both sides.
 And some cracked sea salt on both sides.
 If you have fresh rosemary that would be better but somehow the rosemary thief got into my fridge and stole it all... so I sprinkled with dry. Maybe 1 teaspoon or so, only on one side. Set aside.
 Slice up 1/2 a green pepper...
 And 1/2 a red pepper...
 Place them on a medium heat grill pan for about 2 minutes per side. You just want to give them a some color but keep the nice crunch.
 While you wait, begin your glaze. To a medium heat sauce pan... add 1 tablespoon extra virgin olive oil.
 1/4 cup organic balsamic vinegar...
 1/4 beef broth... I had homemade this time but just make sure there are no sugars added if you are doing paleo... otherwise use any beef broth you like!
 Don't forget to flip your peppers!!
 Press into your glaze one garlic clove...
Again if you had fresh rosemary I would throw in a whole stem to be removed when the sauce is done... however, I'm using dried today and used about 1/2 teaspoon.
 2 teaspoon cane sugar... unless your not on paleo then you could use brown sugar. Whisk it all together and then turn up the heat and bring to a rolling boil. Reduce and let simmer for about 10 minutes uncovered.
 Back to the veggies! Cut up about 1/2 a small yellow onion
 Grill for about 2 minutes per side. Remove and set with peppers.
 Place 2-3 strips of each red pepper, green pepper, and onion on each piece of meat.
 Roll up and stick with a tooth pick. (Make sure to have pre soaked your toothpicks in water so they don't burn on your grill or pan)
 Place on a medium heat grill for about 2 minutes per side until all sides have been grilled (I did mine for about 6 minutes total making them at a medium).
 Flip!
Brush on a little glaze while your flipping. Adds some more flavor! Remove from the pan and serve hot or cold with your glaze for dipping! ENJOY!
