Creamy Key Lime Chicken Enchiladas

Lately I've been trying twists on recipes I love to make. Tonight I decided to add some new flavors to my regular enchiladas. Hope you enjoy!!

Start out by spraying a glass baking dish with non stick spray. Set aside.
Chop 1 small yellow onion.
Throw the onions in a medium heat skillet and add 1 small can of diced green chiles.
Finally shred about 2 cups of cooked chicken.
Throw it all in the pan with the onion and chiles and let cook about 3 minutes
While you wait, chop 1/4 cup of fresh cilantro. Set aside.
When the onions are almost ready, add 1 cup of Greek key lime yogurt

And the 1/4 cup of cilantro

Squeeze in 1 fresh lime. Stir it all together.
Now you can stir in 1/2 cup of your enchilada sauce.
Begin filling your corn tortillas
Place them all seem side down, mine were kind of breaking apart but they'll still taste just as yummy!
Finally sprinkle with 1/2 cup of shredded cheese. Place in a 350 degree oven for about 30 minutes. Garnish with fresh cilantro and serve with rice. Enjoy!
