Peach Whiskey Chicken

I couldn't wait to get back in the kitchen after a busy week of eating out. Since summer is on my mind I really wanted something fresh and bringing in some flavors of summer. So I went with this peach inspired chicken dish! 
Start by drizzling some olive oil into the bottom of a heavy bottom pot. (Preferably one that can go in the oven)
Then throw in 2 tablespoons of unsalted butter with the olive oil
While you wait for the oil and butter to heat up over medium heat, chop up 1 small yellow onion
When the oil is hot, add in 4 chicken thighs to brown
Flip and brown on both sides. You don't need to cook through, it will cook in the oven.
Measure out 3/4 cup whiskey
Pull the chicken out and set aside
Add the onion to the pot and sauté until translucent
When the onions are ready carefully add in the whiskey. This will deglaze the pot and add so much flavor!
When the whiskey has cooked off by half add in 2 cups of BBQ sauce
Along with 1 cup of peach preserves
1/4 cup of warm water
1 tablespoon Worcester sauce 
Whisk the sauce together and add the chicken back into the pot. Turn off the heat
Chop up 1-2 peaches
Throw on top of the chicken
Cover with tin foil and place in the oven for 1 1/2 hours.
Right before the chicken is done, chop up some fresh green onions and parsley. Place the chicken on some freshly mashed potatoes and sprinkle on the parsley and onions. Enjoy!
