Spicy Beef Ragu

Another day of too many things to do and not enough time to do it all. So I knew that if I wanted something hearty for dinner it would have to go into the miracle crock pot! Here's what I came up with!

Start by giving a rough chop to 2 large carrots
Along with 2 celery stalks
And finally 1 medium onion. Throw it all into a blender or food processor along with 4 cloves of peeled garlic. Pulse until almost puréed
Once it's well combined throw it into your crock pot
Now for the meat! Add about 1 1/2 pounds of lean ground beef to a pan and brown
While you wait for the meat to brown, add 2 14.5 oz cans of crushed tomatoes to the crock pot
Now drain 1 15 oz can of garbanzo beans
Rinse under cold water
And toss the beans into the pot
Now for all the flavor! 3 tablespoons of tomato paste
2 teaspoons sugar
1 1/2 teaspoons sea salt
1 1/2 teaspoons Italian seasoning
And finally 1 teaspoon crushed red pepper
To keep it from getting dry while it cooks all day, add 19 oz of beef broth.
 Once the meat is done, add it in. Give it a good stir and put the lid on.
Turn it onto high and cook for 5-6 hours
With about 20 minutes left to cook, boil some water with olive oil and add in the rigatoni
Drain the pasta and add it back into the pot
Ladle the sauce mixture over the noodles and let combine. Serve hot with fresh Parmesan grated over the top. Enjoy!
