With a new year at hand and a resolution to cook more things out of my comfort zone I decided to try a new soup! With the spicy taste and the sweet smells I think this one is a keeper!
Start out by adding two cups of water to a saucepan
Add in 1 cup of farro
With a little salt for flavor. Bring to a boil.
Now add about 1/4 cup olive oil to a large pot over medium heat
Chop up 1 carrot
Once your water is boiling cover and reduce the heat
Now chop up one onion
Add the carrots and onions to the pan with oil. Give it a stir.
Add in 1/2 teaspoon ground cumin...
1 teaspoon paprika...
1/4 teaspoon tumeric
And 1/4 teaspoon red pepper flakes. Stir it all together
Crack in some black pepper
And some salt to taste
Now chop up about 1/4 cup or so of fresh parsley
To the pot add in 3 cups of water
3 cups of chicken broth...
And finally the parsley. Give it a stir
To a bowl add 1 teaspoon of coriander and crush it up
Throw it into the pot
Once your farro is done add in a cup. Stir and cover. Bring to a simmer.
While you wait for the soup to simmer cube a chicken breast
Throw it in a medium high heat pan with olive oil and black pepper
And a little garlic salt to taste
Once the chicken is browned and cooked through, add it into the pot. Cover and leave on low until ready to serve. Enjoy!!
