Taking in my daily dose of vegetables was surpassed with this delicious pasta dish that was gluten free and full of the leafy green superfood, kale! Hope you enjoy it as much as I did.
Start out by adding water and olive oil to a pot over high heat. Bring to a boil
Next drizzle in some olive oil into a pot or large skillet over medium heat
And finally 2 cloves of garlic
Add it all to the pot and stir
While you wait for the veggies to sweat, slice up 2 Italian sausage links
When the veggies are ready throw the sausage in with them and give it a stir.
Now your water should be ready so toss in some pasta. I used gluten free shells but you can use whatever you wanted.
Now for the kale! Add in just enough chicken stock to fill the bottom of the skillet.
Then start to rip some kale into the pan. Once it's filled, cover and let steam.
Once the sausage is almost done, add in 1/4 cup white wine
Drain the pasta when it's cooked through
Add the pasta right in with the veggies and meat. Stir.
A little freshly cracked black pepper.
Stir in the kale, let cook for about 10 minutes on low, covered. Top with freshly grated parmesean and enjoy!!
