To go along with the Stir-Fry I made earlier I wanted to have some sort of pot sticker or egg roll. Recently I have been trying a lot of Asian cooking and I really wanted to give dumplings a try. As I was making these little bad boys my mouth was watering. I don't know if I have a handle on Asian cooking but they turned out pretty gosh darn good!
Start out by making the dipping sauce. To a small bowl stir together 1/2 cup soy sauce and 1 teaspoon rice vinegar.
1/2 teaspoon sesame oil...
3 teaspoons sugar...
2 tablespoons of water. Whisk it all together.
Chop up 1 scallion into small pieces.
Add into the sauce, give it a stir, cover and let chill in the fridge while you assemble the dumplings.
Now you can make the fillings for the dumplings. Start out by finely chopping up 1 cup of bok choy.
1/2 teaspoon of fresh ginger...
And 2 finely chopped garlic cloves.
Add it all to a large bowl with 1 teaspoon of soy sauce...
1/2 teaspoon of sesame oil...
1/2 teaspoon sea salt...
1 egg white...
And finally 1/2 llb of ground turkey (You could also use ground beef or pork and I think it would taste just as yummy)
Using your hands work best but whatever way you choose, mix all the ingredients together until well mixed.
Add enough vegetable oil to cover the bottom of a heavy bottom pot on medium heat
Lay out your dumpling wrapper, and spoon on 1 teaspoon of filling...
Fold over the wrapper and pinch together with a little bit of room temperature water...
Repeat this until you have enough dumplings to line the bottom of your pot.
Carefully add the dumplings into the oil. Let cook for 2 minutes per side until golden brown.
Then add in 1/4 cup of water and quickly cover.
Let cook for 5-6 minutes covered. Remove and pat dry with paper towel. Serve immediately with dipping sauce. ENJOY!
