Sometimes it's okay to eat something really delicious that probably isn't the best for you... okay with that out of my system one of my favorite things for breakfast is fried chicken over breakfast potatoes with gravy. I don't know why I like it for breakfast but I just do! It is so gosh darn yummy, if you don't believe me, you'll just have to try it for yourself!
Start out by chopping up about three russet potatoes into bite size pieces.
Add the potatoes to a medium high heat pan and drizzle on some olive oil...
Some salt... about 1/4 teaspoon...
Some cracked black pepper... about 1/2 teaspoon...
Finally some dried parsley... maybe 1 teaspoon or so... Cover and let cook for about 5 minutes. Stirring twice.
While you wait chop up about 1/2 a yellow onion...
Along with 3 cloves of garlic...
Rip apart two pieces of dry bread into a food processor...
Give it a few pulses until it becomes bread crumbs...
Uncover your potatoes and add in the onions and garlic. Give it a stir, add in some more olive oil if necessary , and cover.
Add the bread crumbs to a plate and sprinkle on a few cracks of sea salt...
A few cracks of black pepper... set aside.
In a separate plate, add 1/2 cup of flour with a few cracks of black pepper. Set aside.
In a medium sized bowl, whisk together one egg and 1 tablespoon of room temperature water. Set aside.
Now you can begin the gravy. Add 1 tablespoon of unsalted butter to a small pot on medium heat.
Once the butter has melted quickly whisk in 1 tablespoon of flour
Whisk in about 1 cup of milk (I used 1%)
Some black pepper...
And finally about 1/4 or less of heavy cream... Whisk together and turn to low heat and let thicken. Stirring occasionally.
Finally time for the chicken. Almost done! In a skillet over medium heat, add about 1/4 cup of vegetable oil or so. While you wait for the oil to heat, cut 1 or 2 chicken breasts into small strips.
I got so excited that I forgot to take a couple pictures, haha. But take a strip of chicken and roll it in the flour. Then coat in the egg mixture. Finally coat it in the bread crumb mixture. Repeat to all the chicken. Slowly begin to add the pieces into the oil being careful of the oil spatter.
Once the chicken is cooked and golden brown place on a paper towel. Place a spoonful of potatoes on a plate followed by some chicken and top with your creamy gravy. Enjoy!
