I have been thinking about beef stew so much lately that the thought of it made my mouth water. So I decided that I better get to making it before I drove myself crazy. It might take a few hours until its ready to eat... but it is SO worth it!
Start off by using a heavy bottom pot and melt 1 tablespoon of butter with a couple tablespoon of extra virgin olive oil.
Then add in about 2 llbs of stew meat (usually beef chuck if they don't label it stew meat at your store). All you want to do at this point is brown the meat, not cook it and remove it from the pot to add in later.
While the meat is browning, (which wont take long in a hot pot) chop up one yellow onion and about three cloves of garlic.
Remove the meat from the pot and dump in the onions and garlic. I love using this heavy bottom pot because it stays so hot so it wont take more than a minute for the onions to become tender and translucent.
Now you can add in a carton of beef stock (32 oz.)
Along with one can of beer...
Chop up any of the large pieces of meat and then add all the meat and the drippings back into the pot!
Some sea salt...
About a tablespoon or so of Worcestershire sauce...
A heaping tablespoon of tomato paste...
About 1 1/2 teaspoons of sugar along with some fresh cracked black pepper...
And finally... about a 1/2 teaspoon of paprika to really kick it up!
Now if you can... stick the lid on and WALK AWAY! It smells so darn good that it's hard to do so but the wait is well worth it!
While you wait you can clean up the dishes ;-) and chop up about 4 carrots...
And about 4 potatoes...
When it's been about 1 1/2 - 2 hours... dump in the veggies...
While you wait for the veggies to cook and soften, you can chop up some fresh parsley to add in at the very end! It's almost time to eat the stew... are you as excited as I was?! Enjoy!
