Paleo Honey Mustard Chicken Thighs

Home from the oilfield and back to paleo! Started tonight's dinner with delicious, flavorful, juicy chicken thighs!

Preheat the oven to 400 degrees and begin by juicing two lemons into a large mixing bowl
Then add 1/4 cup extra virgin olive oil into the bowl

Along with 1 teaspoon of garlic powder. Give it a whisk.

Then toss in about two pounds of bone in skin on chicken thighs. Coat each peice completely.

Season with coarse sea salt

... And some freshly cracked black pepper

Place the chicken skin side down on a lined baking sheet. Place in the oven for 30 minutes.

While you wait for the chicken to cool, mince or press 1 clove of garlic into a small mixing bowl

1 teaspoon of fresh thyme 
2 tablespoons of raw honey
And the final ingredient... 1 tablespoon of mustard
After the 30 minutes brush the honey mustard all over both sides of the chicken. Leave the chicken skin side up this time, and return to the oven for 10 minutes. Enjoy hot!!
