Being Italian it makes putting pasta and pizza out of my diet sometimes difficult. So I searched for a pizza crust alternative and this is what I came up with!
Start with the dough... Put 1/2 cup almond flour in a mixing bowl.
1/2 cup of tapioca flour
1/4 cup + 1 tablespoon coconut flour
3/4 teaspoon sea salt
1 egg
1/4 cup extra virgin olive oil
1 tablespoon raw honey
And finally 1/3 cup of coconut milk.
Mix with a dough hook until combined
Dust your surface and rolling pin with almond flour
Roll out the dough
Place on a baking sheet in a 450 degree oven for 10-12 minutes or until golden brown
Now you can start the sauce. Add 1 16oz can of tomato suace into a sauce pan over medium heat
1 6oz can of tomato paste
1 tablespoon of balsamic vinegar
1 tablespoon of dried basil
1/2 teaspoon oregano
1/4 teaspoon sea salt
2 cloves of pressed garlicAnd finally 1/4 cup of diced yellow onion and let sit on low for about 15-20 minutes
Last step is all the goodies on top of the pizza! Slice 1/2 a red pepper. Set aside
Slice 1/2 a small yellow onion
And chop a couple tablespoons of fresh basil.
Now add 3 slices of bacon to a skillet over medium heat
Once the bacon is browned set aside on a plate with paper towel
Now throw the onion into the same skillet with the bacon fat
Then toss in the red peppers. Sauté until tender and set asideWhile you wait chop the bacon
In the same skillet as you sautéed the vegetables, throw in about 1/4 llb of grass fed beef. Brown.
Spoon some sauce onto the center of your crust
Sprinkle on the bacon and beef
Followed by the peppers and onions
Sprinkle on the fresh basil and enjoy!!
