Pork Chops & Grits with Apple Glaze
One of my favorite things to eat for breakfast is grits, but tonight I wanted to try and make them be a dinner item and add on a pork chop. I always eat my pork chop with applesauce but I decided to do a twist on apple sauce and make an apple glaze. Hope ya like it!

Creamy Soy Nut Peanut Butter
As I was sitting at the table enjoying my homemade jelly, I thought it just wasn't right to make a peanut butter and jelly sandwich unless I made the peanut butter too! I wanted something fresh and delicious. I looked through MANY peanut butter recipes and decided to go down the soy nut route because it had both peanuts and soy nuts. I think I made the right choice! Delish!

Cowboy Corn Chowder

Breakfast Empanadas

Couscous Stuffed Peppers with Goat Cheese
Wanting to make something semi healthy but full of flavor for dinner I looked in the fridge to see what I had. Not wanting my peppers to go bad I decided that I wanted to stuff them with something... Somehow I came up with some sort of a couscous base. So the couscous stuffed peppers with goat cheese was formed!
Homemade Summer Granola
It's summer time and one of my favorite things to eat is fresh fruit! I thought I would spice up my sliced fruit with some fresh granola and yogurt. I looked through several recipes and picked one that sounded pretty tasty with coconut, walnuts, and maple syrup. The recipe called for vanilla extract but I thought I would try maple extract instead. Guess we will see how it turns out!
