Growing up with my mom made me so spoiled about the spaghetti sauce I will and will not eat. I don't think I'll ever be 100% satisfied eating sauce from a jar. So tonight I decided to make sauce from scratch (though it will never beat my moms sauce, it sure came close!)
First you want to dump your cans of whole plum tomatoes into the food processor...
Puree the tomatoes until they are as creamy as sauce...
Add the puree into a large pan on medium heat...
Then chop about three cloves of garlic...
Add both the garlic and onion with about a tablespoon of olive oil into a pan and cook until the onions are translucent...
Add the onion/garlic mixture into the pot with the pureed plum tomatoes and mix in...
Now add 11/2 of water to a can of tomato paste in the pan you were using to cook the onions...
Cook for about 10 minutes, stirring constantly. While you wait begin adding in your spices. Add in a tablespoon of oregano...
And a tablespoon of crushed basil leaves...
And a tablespoon of dried parsley...
Now you can shred about a 1/4 cup of fresh Parmesan cheese...
Throw it into the pot and mix together. Your tomato paste and water mixture should now be done so you can also add that into the pot...Mix all together, if it seems like it is too thick, add in a little bit of water. Let sit on low heat for several hours. (The longer it sits, the better it will taste!) Enjoy!!
