Broccoli Cheese Soup
It was another chilly today up here in the middle of no where so I decided to try and make one of my favorite soups! Broccoli Cheese! Here we go I guess...
First, start by chopping half of a medium yellow onion into small pieces...
Now put the onion into a medium skillet with a tablespoon of unsalted butter. Let cook until the onions are translucent and set aside off the heat.
Melt 1/4 cup unsalted butter in a medium size pot...
Once all the butter has melted whisk in 1/4 cup flour off heat...
Once the mixture looks like a paste, whisk in 1 cup milk and 1 cup half and half. Let simmer for 5 minutes.
While you are waiting for the milk to cook in, start chopping 1 cup of carrots...
Now that the milk is done whisk in 2 cups of chicken broth and set your timer for about 20 minutes and leave the pot on low heat.
Chop up about 2 heads of broccoli...
Once your 20 minutes are up, give it a good stir and add in the chopped carrots and broccoli...
And the onion...
Give it a good stir and set your timer for another 20-25 minutes to allow time for all the vegetables to cook.
You're almost done! When the timer sounds try a piece of broccoli to see if it is to your softness and if it is add in 1/4 teaspoon nutmeg and some salt & pepper...
And about 8 ounces of shredded cheddar cheese (more if you like it cheesier). Now you can just stir it all together until all the cheese has melted. The longer it sits on the stove on the low heat the yummier it gets.. however, I can tell you at this point... It's DELICIOUS! Enjoy!!
