This morning was day two of my second paleo challange! What better way to start if off than with some delicious egg cups for breakfast! Also... These are so SIMPLE to make it only takes about 20 minutes to cook!
Drizzle a little olive oil in your cupcake tins so nothing sticks and then put one piece of ham in each cupcake spot
I only made two egg cups today so I'm only cracking in two eggs, but rule of thumb one egg for every cup!
Crack in some freshly cracked black pepper for taste
Whisk the egg mixture together and pour equal parts into each ham cup
Chop up some fresh green onion... Smells so good!
Sprinkle on each egg cup and place in a preheated 375 degree oven for 10-15 minutes or until egg mixture has puffed up and toothpick comes out clean. Enjoy!! (If you're not doing paleo you could sprinkle on some cheese and it would also be delicious!)
