Spicy Zucchini Salsa

One of my favorite things to make is homemade salsa. I'm constantly looking for new ways to make it and new flavors to add in. When I came across a zucchini twist I had to give it a try and add my own flare!

Start out by preheating the oven to 400 degrees. Then quarter 1 1/2 cups of cherry tomatoes and throw into a large mixing bowl.
Next chop up 1 1/2 cups of fresh zucchini and add in with tomatoes
1/2 of a medium red onion
One jalapeƱo (leave the seeds for more spicy but take out for less heat)
3 large garlic cloves minced
Throw it all in a bowl and toss
Toss in 1/4 teaspoon fine sea salt
1 1/2 tablespoons extra virgin olive oil
Finally some fresh cracked black pepper. Give a really good stir
Evenly spread out on a greased baking sheet. Place in the oven for 10 minutes
While you wait mince up 1/4 cup of fresh cilantro
Remove from the oven and give it a stir and place back in the oven for another 10-12 minutes or until the zucchini begins to turn golden brown.

Remove from oven and put back in your mixing bowl with the cilantro
And finally squeeze in half of a fresh lime. Give it a stir and refrigerate or serve warm. So great on top of burgers. With chips or on top of crackers or bread! Enjoy!!
